🐡 How Long To Bake Mini Cheesecakes
Preheat oven to 160°C/320°F (140°C fan). Prepare pan – Get a 20cm/8" springform cake tin. Turn the base UPSIDE DOWN (Note 4), butter lightly and place a square piece of parchment/baking paper on the base. Then clip into the springform pan – excess paper will stick out, see photos in post and video.
Step 1. Prepare the mold. Spray the molds with some cooking oil. Place your molds on a baking sheet BEFORE filling. (Moving an unsupported silicone mold filled batter is a recipe for disaster.) The metal tray also helps transfer heat to the bottom of the mold while in the oven. Step 2.
Combine 1 cup berries (raspberries, blueberries, blackberries and/or sliced strawberries, 2 Tbsp. water, 1 Tbsp. lemon juice and 2 tsp. honey in a small saucepan. Bring to a boil; reduce heat and simmer, uncovered, until slightly thickened, about 2 minutes.
Crust. Preheat oven to 325 degrees fahrenheit. Line a 12-count muffin tin with double white liners. Spray each muffin tin with non-stick baking spray before adding the cookie mixture. In a bowl, crush vanilla wafers and add them to a medium bowl with 2 tbsps of sugar, cinnamon, and melted butter.
Bake at 350° for 18 to 20 minutes or until set. Remove from oven, and let cool on a wire rack 30 minutes; remove from tart pans. (A pancake turner works great for removing the tarts from the bottom of the pans and transferring them to a serving platter.)
Preheat oven to 325°F with a rack in the center to lower third of the oven. Line a 12-count muffin pan with liners and set aside. Combine graham cracker crumbs, sugar, and melted butter until fully combined. Divide the crust between the 12 muffin cups. I use a 2-tablespoon cookie scoop.
Instructions. Set your ingredients (cream cheese, eggs, sour cream) out on the counter to come to room temperature at least 1 hour, preferably 2 hours before you plan to bake your mini cheeseccakes. Preheat your oven to 350 Fahrenheit. Stir together the graham cracker crumbs, brown sugar, and melted butter.
Preheat the oven to 350º F. Line a regular sized muffin pan with paper muffin liners. In a mixing bowl, combine the graham cracker crumbs and melted butter until it resembles coarse sand. Put 1-2 tbsp of crumbs in each muffin cup. Use a 1/3 cup (or similar) to press the crumbs down firmly into the pan.
Limit it to once, as similarly to cakes, the changing temperature and pressure interrupt the rising process and cause sinking. Instead, use your recipe as a guideline and set a timer to alert you
Since the effect of the water bath is to cook the cheesecake custard filling slowly and gently, an easy alternative is to bake the cheesecake without the water bath but in a 275°F for 1 hour 45 minutes. This technique can be a bit tricky and not always a guarantee against cracks if your oven is older, as shown in the comparison below:
Don't over mix. Pour the filling over the graham cracker crusts, and fill each muffin cup about ¾ full. Bake for 18 to 20 minutes or until filling is firm. Remove from oven, and let cool, then
Beat cream cheese with sugar until light and fluffy. Mix in cocoa powder and salt. Add vanilla and egg, mixing until just combined. Do not over mix. Using a medium cookie scoop, divide filling mixture evenly among cheesecake pan cavities. Fill roughly 3/4 full or 1 1/4 medium scoops. Bake for 15-18 minutes or until set.
